Italian Combo Salad

Growing up outside of New York City, “lunch” meant going to the deli and getting a sandwich on a kaiser roll, stuffed with cold cuts. My all-time favorite is the “Italian Combo,” consisting of salami, ham, provolone, lettuce and tomato on a big roll soaked with vinaigrette dressing.

The Italian Combo also makes for a great salad! If you’re ditching the bread because you’re gluten-free, paleo, or just want to eat more veggies, this is a great lunch option since it’s filling and portable. This salad it pretty low in carbs, so if that’s not your thing have a roll or piece of fruit with it.

I recommend using Applegate Farms cold cuts if possible — they’re free of nitrates and other additives, and the animals are humanely raised. You can find Applegate Farms cold cuts locally at Trader Joe’s, BJs, and Philbricks.

Modifications: Omit cheese and use approved cold cuts to make Whole30 compliant.

Italian Combo Salad: baby greens, salami, ham, provolone, and sundried tomatoes with Italian vinaigrette dressing. Super Natural Nutrition

Ingredients:

2-3 slices salami
2 slices ham
1 slice provolone
2 handfuls of greens
Tomatoes: sliced or sun-dried
1-2 T Vinaigrette (I like Brianna’s Real French Vinaigrette)

Instructions:

1. Stack cold cuts and cheese, and cut into 3/4″ squares. Toss everything together and eat!

Mason Jar Meal Instructions:

1. Add dressing to bottom of jar.
2. Follow with cold cuts, then provolone.
3. Add tomatoes.
4. Top with greens taking care not to get them wet.
5. When ready to eat, shake it up and pour it on a plate!
