Fast, Easy & Cheap: Taco Night!

The other day I blogged about my excellent results with Frontera Chile Verde Enchilada Sauce. Since it was so great, and their ingredients are clean, I’ve picked up a few more of their sauces to try.

Today was a busy day. I skipped lunch thanks to juggling baby and dentist appt (bad dietitian, I know). So, by the time Husband got home at 6:00 we were all pretty starving and dinner had to be fast, or it was going to be take-out.

I had a pouch of Frontera New Mexico Taco Skillet Sauce in the pantry, and three grilled chicken breasts in the fridge. Tacos are in order.

Frontera New Mexico Taco Skillet Sauce

The instructions say to use 1 lb of cut up chicken breast. My three breasts were about 12 oz (3/4 lb); close enough for government work. I sliced the chicken up into thin pieces, threw in a pan and dumped the pouch on top, and then heated the whole thing over medium heat for about 5 minutes. Meanwhile, I schmeared some guacamole on a tortilla, and added some baby greens. When the chicken was heated through I spooned it on, sprinkled a little cheese on top, and done! Dinner took literally 10 minutes to prepare.

Chicken Tacos

This taco sauce had a nice deep flavor with good smokiness. It was slightly spicy, and even though the package says “medium” I would really call it mild. (Believe me. I’m super sensitive to capsaicin, and this barely registered for me.) Even though we used less meat than suggested, it wasn’t too gloppy (unlike my epic Frontera fajita sauce fail). Baby O really dug it too, and readily gobbled down his chicken pieces. My only complaint is it is kind of high in sodium — 280 mg per serving — which isn’t terribly bad health-wise, but it did taste distinctly salty.

All in all, this is a really solid taco sauce and will definitely be going on my Amazon Subscribe & Save to stash in the pantry.


1 pouch Frontera New Mexico
3-4 grilled chicken breasts, cut into thin slices or diced
Lettuce or mixed greens
Shredded cheese


1. Heat cut-up chicken and pouch of sauce in pan over medium heat until heated through.
2. Schmear guac on tortilla.
3. Spread small pile of greens across tortilla.
4. Spread heated chicken/sauce across tortilla.
5. Add small sprinkle of cheese.
6. Roll up and enjoy!
